Father's Day
Today is the day we celebrate all the great Dads out there!
How can we adequately thank Dad for all he does for us? One sure-fire way to show our appreciation is to feed him and recognize his love of the BBQ. Do you know any Dads who don’t honor this mighty grilling machine?
In light of Dad’s obsession, we have rounded up some recipes that we think are certain to please.
But first some starters to whet Dad’s appetite. Whose Dad doesn’t love to feast on chicken wings? We think this recipe for Mexican Chicken Wings delivers just the right amount of crunch and heat.
Next up is Tomato Mozzarella Skewers with Pesto, which will hit the spot with sweet tomatoes, salty cheese and savory pesto. A real crowd pleaser!
Both the chicken wings and the mozzarella skewers are portable appetizers and great for a busy, bustling family barbeque.
For the Dad who loves seafood, look no further than this Grilled Red Curry Shrimp With Pineapple Salsa, an Asian-inspired taste explosion of tang, salt, sweet and spice. The marinade of cilantro, ginger, garlic, red wine and curry paste complements the char of grilled shrimp.
If red meat is Dad’s preference, try Grilled Steak with Tomato Chutney. Grilled steaks with baked potatoes is a classic, perfect for both outdoor and indoor events. Serving steak with tomato chutney takes the flavor to another level. You may want to make extra chutney and use as a condiment for snacks and toast.
In case the weather doesn’t cooperate, we suggest you use the slow cooker. Pork lovers will appreciate another twist on tomato chutney, in this case, paired with barbecue sauce in Pulled Pork Sliders, which exploits the tenderizing advantages of the slow cooker. Place pork shoulder rubbed with spices, broth and red wine, in the cooker, set the timer at eight hours, and you’re done! This frees up hours to spend quality time with Dad.
Dad’s celebration would not be complete without desert so don’t skimp! We’ll bet that avocado is not top of mind when planning for desert but these Brownies with Avocado Ice Cream and Berries will persuade you that avocados can be the ideal substitute for the ‘cream’ in ice cream.
